			<content:encoded><![CDATA[<p>Twelve years ago, at the age of 18, I was diagnosed with Celiac disease and was told that I would need to eat a gluten free diet. Most of the words in that sentence didn&#8217;t even make sense to me. I didn&#8217;t know what Celiac disease meant, or what gluten was or why I needed to keep it out of my diet. Over the past decade, I have learned a lot about eating a gluten free diet and living as a Celiac, and I&#8217;d like to try and explain several things that have helped me over the years. If you, or someone you know, is on a gluten free diet, perhaps my experiences will help you.<span id="more-88"></span></p>
<p>The first thing that you need to know about a gluten free diet is what exactly is &#8220;gluten&#8221;. Gluten is very simply a protein that is found in wheat, barley, rye and a couple of other grains. Gluten is completely harmless, for 99% of the American population, and it is found is many, many food products. If you have any baking or cooking experience, you probably know that gluten is the compound that allows bread to rise and holds pasta together. When you mix wheat flour with water, the gluten &#8220;activates&#8221; and becomes very elastic and strong. These properties of gluten let the air in bread dough expand without escaping, thereby aerating the dough and letting it become light and fluffy. In pasta, gluten is responsible for keeping the dough together and helping it keep a shape. Without gluten, pasta dough would just crumble apart.</p>
<p>If you or someone you know is trying to eat a gluten free diet, it&#8217;s very easy to feel overwhelmed at first. It definitely helps to talk to someone who has successfully gone gluten free already and who can steer you onto the right path. <p>These statistics were released in the March publication of Arthritis Care &amp; Research. The information came from the Joint Canada/United States Survey of Health, and pointed out that the levels for joint disease for people in the U.S. are about 2% higher than Canadians.<span id="more-86"></span></p>
<p>Here is just how the numbers play out;<br />
19% of U.S. residents said they experience arthritis<br />
17% of Canadians claimed experiencing arthritis</p>
<p>9% of U.S. residents reported that arthritis limited their daily actions<br />
7% of Canadians reported that arthritis limited their daily actions</p>
<p>14% of U.S. residents who claimed having arthritis were also overweight<br />
13% of Canadians who reported having arthritis were also overweight</p>
<p>20% of U.S. residents who claimed to be handicapped by arthritis were also overweight<br />
17% of Canadians who claimed being handicapped by arthritis were also overweight</p>
<p>The  most significant difference between the U.S. and Canada had to do with lack of physical exercise. Americans with arthritis were nearly 3 times as likely to report not getting any kind of physical exercise when compared to Canadians with arthritis.</p>
<p>The Canadian and U.S. men were about equal. The significant difference was noticed among the females. Women in the U.S. are inclined to be more obese and more physically inactive than Canadian women.</p>
<p>This new study really is not a surprise, given that obesity is a known factor connected with joint disease. The good news is that unlike inherited genes, weight problems can be changed. Boosting exercise is one such way, which then addresses the inactivity arthritis risk factor as well.</p>
<p>People with arthritis might be reluctant to begin an exercise program.
